Born and raised in the Chicago suburbs, Grayson Claes has carved out an impressive resume, starting his career at a French patisserie in his hometown where he fell in love with the culinary arts. Grayson graduated from the Culinary Institute Of America with degrees in Baking & Pastry and Culinary Science. From there he honed his craft at some of the best restaurants in Chicago, including Mindy Segal’s Mindy’s Hot Chocolate, Paul Kahan’s Publican Quality Bread, Nico Osteria and Blackbird. Grayson found his way back to NYC as a pastry cook at The Nomad and then Eleven Madison Park where he spent 3 years on the pastry team. Prior to 1 White Street, Grayson was the Pastry Chef at Sona Restaurant. Grayson's passion and skill shine through daily at One White Street and he is so excited to be key part of the team.
